Hey Mob, Jordon here with this artichoke and mint fatteh. If you haven't tried it before, fatteh is a deliciously unfussy dish that varies depending on who's making it and where you are but almost always involves bread layered up with various ingredients. Here it's crispy fried bread with creamy chickpeas, artichokes and oaty yoghurt to keep things vegan. A little chilli and mint over the top and you're away.
